You’re guaranteed to fall in love with these Baked Pumpkin Oats. They taste like eating pumpkin cake for breakfast but made with good-for-you ingredients and an added boost of collagen to help revitalize skin, hair, and nails.*
1/3 cup pumpkin puree
1/4 cup almond milk
1 egg
3 tbsp maple syrup
1/2 cup oat flour
1 scoop Youtheory® Unflavored Collagen
Powder
1 tsp baking powder
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/8 tsp salt
1/4 cup mini chocolate chips
Preheat oven to 350F.
Grease 2 small ramekins or 1 large ramekin and set aside.
In a medium bowl, whisk together pumpkin puree, almond milk, egg, and maple syrup.
Then pour in oat flour, collagen powder, baking powder, pumpkin pie spice, cinnamon, and salt.
Stir until well combined and the mixture begins to thicken.
Pour batter into the ramekin, almost to the top. Then top with mini chocolate chips.
Bake for 20-25 mins.
The shorter you cook it the gooier the center will be, the longer you cook it, it will become more cake-like.
Remove from oven and let cool before enjoying!
