Pumpkin Protein Bars

Ditch the candy bars and make Pumpkin Protein Bars! These protein bars taste like pumpkin cookie dough and are boosted with Youtheory® Collagen to help revitalize skin, hair and nails.*

 

Pumpkin Protein Bars

Ingredients

1.5 cups + 2 tbsp oat flour⁠

1/4 cup vanilla protein powder⁠

3 tbsp Youtheory® Collagen⁠

1/2 tbsp pumpkin pie spice⁠

1/2 tbsp cinnamon⁠

1/8 tsp salt⁠

1/2 cup cashew butter⁠

1/4 cup honey

⁠1/4 pumpkin purée⁠

1 tbsp melted coconut oil⁠

2 tsp vanilla

⁠1/3 cup mini chocolate chips


Directions

In a medium bowl, whisk oat flour, vanilla protein powder, collagen, pumpkin pie spice, cinnamon, and salt.

Next add in cashew butter, honey, pumpkin purée, coconut oil and vanilla extract. Stir well until a thick dough forms.

If the dough is too wet add in 1 tbsp of oat flour at a time until you achieve the desired consistency.

Fold in mini chocolate chips and then transfer the dough to a mold or a parchment lined loaf pan.

Press the dough in and add extra mini chips to the top. Refrigerate or freeze for 1-2 hours and then enjoy!
